Oven baked Pork and Vegetables

Oil | 2 Tbs |
Butter | 2 Tbs |
Pork Tenderloin (could use Pork Loin) | |
Celery, sliced | 2 stocks |
Onion, sliced | 1 med |
Carrot, sliced | 3 |
Mushrooms, sliced | 1 sm. pkg |
Dry White Wine | 1/2 cup |
Flour | 1/4 cup |
Chicken Stock | 2 cups |
Salt and Pepper to taste |

Preheat oven to 325 degrees.

In a heavy pan (dutch oven works best) heat oil and butter. Add meat and brown on all sides. Remove meat from heat; then add vegetables.

Cook vegetables until slightly limp (a few minutes). Add wine and cook for 5 minutes. Add flour and cook 3-4 minutes. Add stock. Cook to thicken and season with salt & pepper.

Add pork tenderloin back to the pot with the vegetables and stock. Stir. Cover and bake for 1 1/2 hours until tender.
