Baked Pork Tenderloins

Oven baked Pork and Vegetables

Ingredients List

Oil 2 Tbs
Butter 2 Tbs
Pork Tenderloin (could use Pork Loin)
Celery, sliced 2 stocks
Onion, sliced 1 med
Carrot, sliced 3
Mushrooms, sliced 1 sm. pkg
Dry White Wine 1/2 cup
Flour 1/4 cup
Chicken Stock 2 cups
Salt and Pepper to taste

Instructions

1 Preheat oven to 325 degrees.
2 In a heavy pan (dutch oven works best) heat oil and butter. Add meat and brown on all sides. Remove meat from heat; then add vegetables.
3 Cook vegetables until slightly limp (a few minutes). Add wine and cook for 5 minutes. Add flour and cook 3-4 minutes. Add stock. Cook to thicken and season with salt & pepper.
4 Add pork tenderloin back to the pot with the vegetables and stock. Stir. Cover and bake for 1 1/2 hours until tender.
